Garden Mixed Vegetable Relish

5-1/2 cups chopped red cabbage
(about 1-1/4 lbs.)
2 cups chopped carrots
2 cups chopped onion
1-1/2 cups chopped celery
1 cup red wine vinegar

1/2 cup water
1/2 cup firmly packed brown sugar
2 tsp. salt
1 tsp. mustard seed
1 tsp. celery seed
1/8 tsp. ground black pepper

In large saucepan, combine all ingredients; bring to a boil. Reduce heat and simmer, covered, until vegetables are tender (about 45 min.), stirring occasionally. Spoon into jars; cover tightly; refrigerate. Makes 6 cups; may be doubled or tripled. Keeps well, refrigerated, about four weeks.
