Zucchini Bread 2

3 eggs
2-1/2 cups. white sugar
1 cup vegetable oil
2 cups grated zucchini
2 tsp. vanilla
1 tsp. baking soda
1-1/2 tsp. baking powder
3 cups flour
2 tsp. cinnamon (optional)
1 tsp. salt
1 cup nuts, chopped
1 cup raisins or 8 oz. crushed pineapple (drained)
or 2 cups apples, coarsely chopped |
Beat the eggs; add oil, sugar, zucchini, and vanilla. Mix well. Add flour, salt, baking soda, baking powder, cinnamon (optional); beat well. Add nuts and raisins or fruit. Pour into two greased and floured loaf pans. Bake 50–60 minutes at 350 degrees.
