4 cups cottage cheese
1 Tbsp. olive oil
2 Tbsp. fresh lemon juice
1 cup Roma tomatoes, diced
2 Tbsp. red onions, finely diced
1 tsp. smoked paprika, plus more for garnish
In medium bowl, mix all ingredients with a spoon. Let stand 10 minutes and sprinkle with additional paprika, if desired. Makes 4 servings.
