Easy Chicken Gumbo

3 Tbsp. margarine or butter
16 oz. can cut okra, drained
1 small onion, chopped (1/4 cup)
1/2 small green pepper, chopped
4 cups chicken or turkey broth
16 oz. can whole tomatoes
1 small bay leaf
1 tsp. salt
Dash of pepper
2 cups chicken or turkey, cut up
1 Tbsp. parsley, snipped
3 cups hot cooked rice |
Heat margarine in a 3-quart saucepan until melted. Add okra, onion, and green pepper. Cook and stir until onion is tender. Stir in broth, tomatoes with liquid, bay leaf, salt, and pepper. Heat to boiling, reduce heat and simmer uncovered for 15 minutes. Stir in parsley and chicken. Heat through and serve chicken over rice. 6 servings.
