Corn and Fish Chowder

15 filets pan fish, thawed
1/4 cup onion, chopped
2 Tbsp. butter
2 cups potatoes, diced
1/2 cup water
2 cups milk
1 tsp. salt
1/4 tsp. pepper
1 pkg. frozen corn or 1 can corn
1/2 cup celery, diced
1 clove garlic
1/4 tsp. thyme (optional)
3 Tbsp. wine (optional)
1/4 tsp. parsley (optional) |
In a pot, sauté onions and butter; add potatoes, water, milk, salt, and pepper. Cook until potatoes are softened, then put into a crockpot; add corn. In microwave, cook celery and garlic. Add to crockpot. Put fish into a small dish and microwave for 1 minute. Add to crockpot. Add thyme, wine, and parsley, if desired. Cook on high for 2 hours.
