Salsa Chicken Salad


1 pound boneless, skinless chicken breasts
5 tsp. Mrs. Dash Original Chicken Grilling Blend, divided
1/4 cup chunky salsa
1/4 cup light sour cream or mayonnaise
1 cup whole kernel corn, cooked and drained
1 cup chopped red bell pepper
1 package Dole Just Lettuce (11 oz.), Greener Selection (12 oz.), or other variety

 

Preheat broiler or grill (medium). Coat each half chicken breast with 4 tsp. grilling blend. Cook 5 to 6 minutes. Turn and continue cooking until chicken is no longer pink in center. Combine salsa, sour cream, and remaining 1 tsp. grilling blend. Cut cooked chicken into bite-sized pieces. Combine with corn and bell pepper. Divide salad greens equally between four plates. Top with chicken mixture. Spoon salsa mixture over each salad. Makes 4 servings.
