1/4 cup butter
1/8 cup minced onion
1 cup chopped fresh Shiitake mushrooms
1/3 cup flour
2-1/2 cups chicken stock
1-1/2 qts. whipping cream
1 cup cooked wild rice, rinsed in cold water after
cooking
1/3 cup dry sherry
Salt and pepper to taste
Melt butter; saute onions and mushrooms.
Blend in flour; add stock. Cook until thick, then add
rice. Simmer 30 minutes. Blend in cream and sherry.
Simmer and season to taste. Makes 1/2 gallon
