Taco Mac Salad
Cindy Bennett, Portage

1-1/2 cup dry twist macaroni
1 lb. ground beef
1/2 cup green pepper, chopped (optional)
1/2 cup onion, minced
1 pkg. taco seasoning
1 cup Cheddar cheese, grated
1 box cherry tomatoes
1/2 c. French (Western type) dressing
1/2 head lettuce, shredded coarsely or chopped small
5-1/2 oz. package of taco chips (or any flavor; chili Fritos work well, too)
Salt and pepper to taste

Cook macaroni according to package directions. Brown the ground beef with green pepper and onion. Add taco seasoning and cook according to direction on package; cool. Mix all ingredients together (except lettuce and taco chips). Add lettuce and chips just before serving. Great for potluck (makes a big bowl).
